Broccoli and cheddar twice-baked potatoes is an easy and delicious recipe. The twice-baked potatoes are creamy, crispy, cheesy, comforting, and convenient. These twice-baked potatoes require two baking sessions. The first session is to soften the potatoes.
The ingredients for this recipe are:
- Four medium russet potatoes washed well and dried;
- One teaspoon of olive oil;
- Three and ½ teaspoons of salted butter, very soft;
- ½ cup of non-fat Greek yogurt;
- ¼ cup of buttermilk;
- ½ teaspoon of salt;
- ½ teaspoon of pepper;
- ¾ teaspoon of chives;
- ¾ teaspoon of garlic powder;
- ½ teaspoon of onion powder;
- ½ teaspoon of dried onion flakes;
- ½ teaspoon of dried dill weed;
- ½ teaspoon of paprika;
- 1 and ½ cups of cooked broccoli, chopped, divided;
- 2 cups of cheddar cheese, shredded, divided.
The instructions on how to cook this recipe are the next:
You need to preheat the oven to 400 degrees (F). Then you need to line a small baking sheet with parchment paper and set aside.
After this, you need to place the potatoes in a small baking dish and bake for one hour, or until they are soft. Then remove them from the oven and set aside to cool. Once they are cool enough to safely handle, slice each one in half, lengthwise. You need to scoop out the potato pulp and place it into a large bowl, but be careful to leave the skins intact and rub the outsides of the potato skins with a little olive oil and place them on the prepared baking sheet and set aside.
After you do this, you need to add the butter to the potato pulp and mash by using an electric mixer or a potato masher until they are fairly smooth and then add Greek yogurt, buttermilk, salt, pepper, chives, garlic powder, onion powder, dried onion flakes, dill weed, paprika, broccoli and ¾ cup of the cheese. You need to divide the filling evenly among the potato shells and the top with remaining cheese. Bake this for 20 to 25 minutes or until the cheese is melted and the potatoes are heated through.
Instead of Greek yogurt, you can use sour cream, and you may use any other cheese instead of the cheddar.
